For the men:

Pork Chops, potato, carrot, runner beans, cauli, swede & broad beans.

For me:

Vegetarian quorn fillets, spud, cauli & broad beans.

followed by strawberry soya yoghurt & apple.

Sounding a bit healthy there Clare.


Our menu for the week reads like this...

Last night: Spag Bol

Tonight: Penne Roberto

Tuesday: Spaghetti w/- ham, peas & capicum

Wednesday: Chicken & Pumpkin Rissotto

Thursday: Classic Curried Sausages w/- rice

Friday: Fish & Wedges

Saturday: BBQ & Salad

I do try Nic!!! Dad has recently been diagnosed with diabities & needs to lose some kgs so we are trying to encourage him a bit. Im vege & been on a healthy eating thingy since i was sick before Xmas & feeling so much better in myself x

Sounds like a yummy week nic and I especially like the sound of fish and wedges (something a little different hey!!!!)

I've cooked PT and I a baked dinner two weeks in a row on Monday evenings.

Oh I did Missty. We had seasoned beef the first week and then a garlic and herb chicken breast roll last night.

I did my left over Pork roast stir fry last night and wow..

so easy and yummy..

it took all of 20mins to do - including prep time...

The kids tea took longer - they had oven fish and chips..

But here is what you do:

Cut up vegs - say capisium, snowpeas, zucchini, carrot, spring onions..

Make sure you cut up the left over pork in thin slices..

Then - if you want rice - get it going Or we did Hosikin noodles..

heat in wok - a small amount of Peanut oil..
Cook vegs until crispy or soft (about 2mins there)..
Add the pork along with some hosin sause and stock (i used a little chinese 5 spice and water) - heat it thro..

Add the noodles - i think it gives a little more flavour to them - stir for about a min or two..

and then serve..

yummy...

will do again for sure - and no wasted pork..
